The road is good, but it is a main highway between Santander and Bogota, so it is heavily trafficked - lots of trucks on this road.
There are Cafes, restaurants, and other provisions in the town of Aratoca at km 26. You can also go into the national park (Parque Nacional del Chicamocha at km 12.6) and stop at the cafe, visitor center, or take the cable car across the canyon.

Chicamocha canyon is the second largest canyon in the world (the Grand Canyon is #1). The climb is in the Chicamocha National Park.
You can visit the park at Chichamocha (mile 12) and even take the cable car to the other side of the canyon. Stretching all across the canyon, the cable car the longest in the world, and is 6.3km long!
